Quick Pickled Radishes and Beetroot
These radishes or beetroot make a great gift for people, or to enjoy on summer platters or salads.
Ingredients
1 cup white vinegar
3/4 cup white or caster sugar
1/2 cup water
2 pinches of celery seeds
Radishes, small beetroot or small carrots to fill jars
Method
- Wash radishes/beetroot/carrots well and trim tops
- Slice thinly (about 1-2mm thick) and place in clean jars, packing tightly
- Add all other ingredients to a pot and gently bring to the boil so that the sugar dissolves.
- Once boiling, carefully pour the hot liquid over the pickles and seal with lids.
- Keep in fridge and use within a month (unless you eat them all first!)
