Pickled beetroot and radishes with two fresh radishes in front of pickle jars

Quick Pickled Radishes and Beetroot

These radishes or beetroot make a great gift for people, or to enjoy on summer platters or salads.


1 cup white vinegar

3/4 cup white or caster sugar

1/2 cup water

2 pinches of celery seeds

Radishes, small beetroot or small carrots to fill jars



  1. Wash radishes/beetroot/carrots well and trim tops
  2. Slice thinly (about 1-2mm thick) and place in clean jars, packing tightly 
  3. Add all other ingredients to a pot and gently bring to the boil so that the sugar dissolves.
  4. Once boiling, carefully pour the hot liquid over the pickles and seal with lids.
  5. Keep in fridge and use within a month (unless you eat them all first!)
